Sweet Potato-Black Bean Quesadillas

A delicious and healthy alternative to traditional quesadillas.  Flex the ingredients according to availability and taste.

Ingredients

  • 1 1/2 cups finely cropped dropped & chopped onion
  • 2 garlic cloves minced or pressed
  • 3 tbs oil
  • 3 cups grated peeled sweet potato (about 2 potatoes)
  • One 14 oz can of black beans drained
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 2 tsp ground cumin
  • generous pinch of cayenne (or more)
  • salt and grond black pepper to taste
  • 1 cup grated sharp cheddar cheese
  • 8 tortilIas (8- to l0-inch)

Preperation

Saute onions and garlic in oil until soft, add sweet potatoes and spices cook for about 10 minutes stirring frequently. Add beans salt and pepper, mix in and heat until beans are warm.

Put mixture on tortillas, add cheese and pan fry to quesadilla perfection.

Serve with salsa and sour cream.
